Carrot and Orange Soup
Nutritional valie per serving.
Make a batch and freeze into portions
1 tbsp olive oil
1 garlic cloves
1 litre water
1 zest orange
1 tbsp tomato purée
1 pinch salt
1 pinch black pepper
1. Melt the oil add chopped garlic, onion and carrot.
2. Stir and cook covered for 5 minutes on low heat.
3. Add water, orange juice zest, tomato puree and seasoning.
4. Simmer covered for 30 minutes.
5. Place in a blender until smooth.
