Chicken Paprika with Rice

Can substitute sour cream for Greek yoghurt


4 chicken fillet

1 onion

1 red pepper chopped

2 tbsp hot paprika

1 tbsp tomato purée

1 chicken stock cube*

50 g low fat sour cream

65 g basmati rice


1. Heat olive oil in a large pan
2. Add onion and red pepper- cook for 2 minutes
3. Add the diced chicken – cook, until browned
4. Add tomato purée, paprika, chicken stock and sour cream
5. Mix all well
6. Cook for further 8 mins.
7. Serve with rice
