Nutritional value per serving
125 g mozzarella cubes low-fat*
0.5 red chilli
3 sprigs fresh mint
1 tbsp olive oil
1 pinch black pepper
1. Put the mint leaves on a chopping board, add the 0.5 red chilli, zest over half the lemon and chop it all together until really fine.
2. Put into your serving dish, drizzle over the olive oil and squeeze in the juice of half a lemon.
3. Add in the salt & pepper.
4. Put your peeled/spiral courgettes and put onto top of the dressing.
5. Drain the tub of mozzarella and add to the salad.
6. Toss well.
