Ingredients

1 chicken fillet

5 slices cucumber

1 grated carrot

1 tomatoes

4 cubes low fat feta

1 handful rocket leaves

6 olives pitted

1 mixed bell peppers

15 g walnuts

1 tbsp balsamic vinegar

Directions

  1. Cook chicken fillet – add spice (cajun, paprika) if desired.
  2. Chop tomatoes, cucumber & peppers
  3. Put rocket leaves, carrot grated, cucumber, tomatoes & peppers into a bowl
  4. Mix in the balsamic vinegar
  5. Add the feta cheese & sliced chicken.
  6. Add olives & nuts

Serve and Enjoy.
