Ingredients

50 g basmati rice

handful mixed leaves

1 tbsp parmesan cheese grated

0.5 red bell pepper

0.5 cucumber

75 g tomatoes

100 g goats cheese

50 g cooked beetroot

1 tbsp pine nuts

Directions

1. Cook rice as per package instructions. Once cooked place in a bowl and add the fresh parmesan.
2. In a large bowl, combine the salad greens, pepper, cucumber and tomatoes
3. Place the salad mixture on top of the rice. Then layer with the crumbled goats cheese and beetroot.
4. Sprinkle with toasted nuts.
