Linguine with Avocado, Lime & Tomatoes

126 g linguine wholemeal*
10 g fresh coriander
1 red onion
1 red chilli
1. Cook the pasta according to pack instructions – about 10 mins.
2. Meanwhile, put the lime juice and zest in a medium bowl with the avocado, tomatoes, coriander, onion and chilli, if using, and mix well.
3. Drain the pasta, toss into the bowl and mix well. Serve straight away while still warm or serve cold.
Can make extra and bring for the next day lunch.
