Mac& Cheese
Dinner
Ingredients
300 g macaroni*
253 ml provamel soya cream
25 g english mustard
15 g light tahini
25 g nutritional yeast
4 garlic cloves
250 g Broccoli
242 g mushrooms
200 g vegan quorn chicken pieces
1 tbsp ground turmeric
1 tbsp smoked paprika
0.5 tsp onion powder
5 g coconut oil
Directions
1. Cook macaroni according to packet instructions
2.Heat coconut oil in pan on medium-high heat & add chopped mushrooms, 2-3mins
3.Add quorn, 2 mins
4.Add crushed garlic, 1min
5.Add onion powder & mustard, 1 min
6.Pour in soya milk, tahini, turmeric & smoked paprika, stir and turn down heat to low
7.Consistency is pretty thick so I added some boiling water to thin out slightl
8.Steam chopped broccoli in the meantime, 5 mins
9.Once quorn and veggies cooked through take off the heat and stir in nutritional yeast
10.Add In macaroni & broccoli
