Spaghetti Carbonara

The heat of the pasta will cook and thicken the egg so ensure the pasta is still hot when adding the egg mixture.


60 g parmesan cheese grated

30 g percorino cheese

1 shallot 30g

150 g bacon cubes

1 tbsp olive oil

350 g wholewheat spaghetti*

3 whole egg

1 egg yolks

1 pinch pink himalayan salt

1 pinch black pepper


  1. Grate cheese.
  2. Chop the shallot finely.
  3. Heat oil in a large wok.
  4. Add bacon and shallots and saute for 5 mins.
  5. In the meantime cook spaghetti as per package instructions.
  6. Once cooked mix well with bacon and shallots.
  7. Mix the egg, grated cheese, salt and black pepper in a bowl.
  8. Add egg mixture to wok with pasta and bacon. (see tip)
  9. Combine well.
  10. Serve & enjoy.
