Salmon Fillet X 2 with Stir-Fry & Sweet Potato Chips

Ingredients
2 fillet of salmon
2 sweet potatoes
1.5 tbsp olive oil
0.5 tsp paprika
1 onion
1 mixed bell peppers
30 g spinach
30 g green beans
Directions
1. Preheat the oven to 180°C (fan 160°C/gas mark 4).
2. Peel and cut the potato into thin and long strips.
3. In a large bowl toss them roughly in 0.5 tbsp olive oil with paprika.
4. Lay the chips on a roasting dish and cook for 20 – 25 mins tossing every 5 minutes.
5. Sprinkle spice of your choice (cajun, paprika, chilli etc.) or season with salt & pepper over the raw salmon bake and place in the oven for 12 -15 mins.
6. In the meantime, cook onion in the 1 tbsp of olive oil until soft.
7. Add peppers and green beans, cook for a few mins.
8. Add spinach until wilted.
9. Once salmon and sweet potato are cooked remove from oven and serve with stir-fry.
