Recipe of the Week – Cajun Chicken Salad
Healthy Cajun Chicken Salad
Cajun Chicken Salad is a perfect healthy lunch. Full of good protein with a healthy salad. Adding the spice to the chicken will give it a great spice kick. Add good quality wholemeal bread/spelt bread or rye bread on the days that you need more carbs (especially training/exercise days)
2 chicken fillets
½ tsp. paprika
½ tsp. salt
½ tsp. cayenne pepper
½ tsp ground cumin
½ tsp dried thyme
Sprinkle of black pepper
½ tsp garlic powder
1 tbsp olive oil
2 handful of mixed leaves (rocket, spinach, lettuce)
8 cherry tomatoes
5 slices of cucumber
½ bell pepper
½ red onion
Add 2 slices of brown soda bread for the days you are training.
- Preheat oven to 180 C / Gas mark 4. Mix together all of the spices. Rub one side of chicken breasts with spice mixture.
- Heat oil in a cast-iron pan over high heat.
- Place chicken in a hot pan, seasoned side down, and cook for 1 minute. Turn, and cook 1 minute on another side.
- Place breasts on a lightly greased baking tray. Bake in preheated oven for 5 to 10 minutes, or until cooked thoroughly.
- Serve with the salad
