Cajun Chicken, Side Salad with Brown Bread

cajun chicken & Side Salad

Serves 2


2 chicken fillets
½ tsp. paprika
½ tsp. salt
½ tsp. cayenne pepper
½ tsp ground cumin
½ tsp dried thyme
Sprinkle of black pepper
½ tsp garlic powder
1 tbsp olive oil

Side Salad:
2 handful of mixed leaves (rocket, spinach, lettuce)
8 cherry tomatoes
5 slices of cucumber
½ bell pepper
½ red onion

2 slices of brown soda bread* (1 slice each)
Spread of butter**

Use gluten-free if required*
Use lactose-free if required**


  1. Preheat oven to 180 C / Gas mark 4. Mix together all of the spices. Rub one side of chicken breasts with spice mixture.
  2. Heat oil in a cast iron pan over high heat.
  3. Place chicken in hot pan, seasoned side down, and cook for 1 minute. Turn, and cook 1 minute on another side.
  4. Place breasts on a lightly greased baking tray. Bake in preheated oven for 5 to 10 minutes, or until cooked thoroughly.
  5. Serve with the side salad
