Creamy Prawns

Serves 1



5 cherry tomatoes, halved
60g cream cheese light Philadelphia
1 clove garlic, crushed
1 tsp olive oil
½ large courgette, sliced
80g prawns uncooked & peeled


1. Place olive oil in a pan on medium heat. Add crushed garlic and fry for 1-2 minutes.
2. Add the halved cherry tomatoes and sliced courgettes to the pan and cook until tender.
3. Add the cream cheese to the pan and stir well allowing to melt.
4. Add the prawns to the sauce and allow the sauce to simmer until prawns turn pink for approximately 5-10 minutes.
