Bacon, Lettuce, Tomato & Peppers Sandwich

2 bacon rashers

1 tomatoes

0.5 yellow bell pepper

2 slices wholemeal bread*

1 tbsp fromage frais fat free

1 tbsp extra light mayonnaise*

1 handful mixed leaves


1. Preheat the grill to hot.
2. Grill the pepper halves for 10 minutes then transfer to a sealable plastic bag and set aside to cool for 10 minutes.
3. Meanwhile, grill the bacon on both sides until cooked to your liking. Cut into large pieces and set aside.
4. Mix the mayonnaise and fromage frais then spread on a slice of toast or bread.
5. Add the lettuce, tomato and bacon.
6. Peel off and discard the pepper skin and add the flesh to the sandwich, topping with another slice of toast or bread.
