Use vegan mayo for egg allery if required*

Ingredients

1 slices lean roast beef

2 slices wholegrain bread*

2 tsp extra light mayonnaise*

0.25 carrot

0.25 vacum packed cooked beetroot

1 red onion

1 handful mixed leaves

1 pinch black pepper

Directions

1. In a bowl, mix together gratedcarrot, beetroot and red onion with the vinegar and season with black pepper.
2. Spread each slice of bread with 1 tsp mayonnaise, then top them with the lettuce leaves and the roast beef.
3. Add the salad then sandwich together with the remaining slices of bread.
