BLT in a bowl with Eggs and Brown Bread (with nuts)

2 bacon rashers

1 whole egg

1 handful lettuce

5 cherry tomatoes

6 slices cucumber

1 scallions

30 g mixed nuts

1 soda bread*

1 tsp butter*


1. Cook rashers under the grill to your liking.
2. Boil egg for 8-10 mins – allow to cool. Peel and cut into pieces.
3. Prepare chopped tomatoes, cucumber and scallion and lettuce in a bowl.
4. Mix egg with salad.
5. Cut cooked rashers into pieces and mix into bowl of salad with nuts.
6. Serve with bread.
