Chargrilled Corn on the Cob with Herb Dip

Double the herb mixture and freeze for next time

Ingredients

1 small corn on the cob

0.5 tsp olive oil

1 pinch salt

1 pinch black pepper

112 g fromage frais fat free

1 spring onions

0.5 tbsp fresh chives

0.5 tbsp fresh mint

0.5 red chilli

0.25 lemon juice

1 pinch salt

1 pinch black pepper

Directions

1. Boil the corn on the cob in a saucepan for about 5 minutes until tender. Drain and pat dry with kitchen paper.
2. Rub the olive oil on the corn cobs lightly and place them in a heated cast iron grill pan or grill. Cook for about 2 minutes, turning frequently, until slightly charred.
3. Meanwhile, mix all the remaining ingredients together for the herb dip and spoon into a serving bowl.
4. Season the cooked corn cobs with salt and plenty of freshly ground black pepper, and serve immediately sprinkled with the herb dip
