Chicken Arrabiata

Ingredients
4 chicken fillet
1 tbsp olive oil
1 onion
3 garlic cloves
1 pinch mixed herbs dried
1 tsp chilli flakes
500 g passata
1 pinch salt
1 pinch black pepper
1 pinch chopped parsley
Directions
1. Dice onion, crush the garlic
2. Heat the oil in a large frying pan over a medium heat. Dice chicken breasts, season with salt and pepper and add to the pan. Cook for 10 mins until browned.
3. Remove chicken from pan.
4. Add more oil if required – Cook the onion, garlic, herbs and chilli flakes for 4-5 minutes.
5. Stir in the passata and season to taste.
6. Bring to the boil, cover and simmer for 15 minutes, stirring occasionally.
7. Add the chicken to the sauce and mix well.
8. Garnish with chopped parsley.
