Chicken Breast Pizzaiola

2 chicken fillet

66 g edam cheese

1 onion

1 garlic cloves

1 tsp olive oil

400 g can chopped tomatoes

1 vegetable stock cube* use organic if possible

0.5 litre water

0.5 tsp dried oregano

1 pinch salt

1 pinch black pepper

160 g basmati rice


  1. Season chicken with salt & pepper.
  2. Grate Edam cheese in a bowl.
  3. Preheat oven to 200 Celcius.
  4. Sautee diced onion & garlic in olive oil until soft.
  5. Add can of tomatoes &  0.5 litres of stock to the onion and garlic.  Cook for 7 mins until hot.
  6. Cover the chicken breast with the tomato sauce and top with grated cheese & oregano.
  7. Bake in the oven for 10 mins until cheese becomes golden brown.
  8. While chicken is cooking – cook rice as per package instructions.
