Ingredients
1 chicken fillet
1 whole egg
1 handful lettuce
8 slices cucumber
1 tomatoes
2 slices red onion
2 tbsp sweetcorn
1 tsp balsamic vinegar
30 g mixed nuts
Directions
1. You can either boil the chicken in a saucepan or for flavour sprinkle spice of your choice (cajun, paprika, chilli etc.) over the raw chicken and bake in the oven until cooked through approx. 20 mins.
2. In the meantime boil the eggs and allow to cool.
3. Prepare the salad in a bowl or lunchbox.
4. Once the chicken is ready, slice into pieces along with the egg and the nuts and add to the salad.
Serve and Enjoy.
