Chicken Fajitas with a Side of Sweet Potato Chips

2 chicken fillet

0.5 red onion

0.5 red bell pepper

1 tsp ground cumin

2 tsp paprika

0.5 tsp ground coriander

0.5 tsp garam masala

3 tbsp olive oil

4 wholewheat flour tortillas

2 medium sweet potatoes


1. Dice onions & peppers.
2. Heat 1 tbsp. of olive oil in a pan over medium heat. Add the onion and red pepper and cook over low heat for 5 minutes until soft.
3. In the meantime add another tbsp. of olive oil in a bowl with spices – 1 tsp cumin, 1 tsp paprika, 0.5 tsp coriander, 0.5 tsp garam masala and season with salt and pepper.
4. Add chicken cut into strips and coat the chicken with the mixture.
5. Remove the onion and peppers from the pan and place it in a separate bowl.
6. Increase the heat on the pan and add the chicken – cook for 6- 8 mins, until cooked through and slightly golden.
7. Return onion and peppers to the pan and cook for a further 2 minutes.
8. Meanwhile, heat the tortillas in the oven covered in tin foil for 5 minutes.
9. Each person can wrap tortillas around the chicken mixture.

For the Sweet Potato Chips:
1. Preheat the oven to 180°C (fan 160°C/gas mark 4).
2. Peel and cut the potato into thin and long strips.
3. In a large bowl toss them roughly in remaining olive oil with remainder paprika.
4. Lay the chips on a roasting dish and cook for 20 – 25 mins tossing every 5 minutes.
