Chicken Pesto & Pasta with Salad

85 g wholemeal pasta*

1 chicken fillet

20 g mixed bell peppers

1 tsp green pesto

1 pinch salt

1 pinch black pepper

1 tsp olive oil

0.5 onion

1 handful mixed leaves

8 cherry tomatoes

5 slices cucumber

0.5 red bell pepper

0.5 red onion


1. Cook the pasta as instructed on the pack.
2. Heat the oil in a frying pan – fry chicken until cooked through. Remove from pan and set aside.
3. Fry onion for 2 mins
4. Season with salt and pepper.
5. Add the chopped pepper, chicken, pasta and pesto sauce.
6. Stir well. Cook for a further 5 minutes.
7. Serve with salad (Mixed salad leaves, chopped tomatoes, cucumber, peppers and onion).
