Ingredients

1 chicken fillet

0.5 mango

5 slices cucumber

90 g quinoa

0.5 red bell pepper

0.5 red onion

0.5 avocado

1 handful mixed leaves

Directions

1. You can either boil the chicken in a saucepan or flavor with the spice of your choice (cajun, paprika, chili etc ) over the raw chicken and bake in the oven until cooked through.
2. Cook quinoa as per package instructions.
3. Prepare the salad by finely chopping your cucumber, onions, peppers avocado and cucumber.
4. Peel and chop the mango.
5. Combine all ingredients except chicken to a bowl.
6. Slice up the chicken when cooked and mix through.
 
Note:
Pre-cook the night before for on the go lunch
