Chicken Satay Curry

4 chicken fillet

13 cherry tomatoes

100 ml coconut milk

1 tbsp fresh coriander

1 tsp garam masala

1 tbsp peanut butter

1 red chilli

2 cm ginger

130 g brown rice


1. Cook rice as per package instructions.
2. To make the peanut butter sauce combine the grated ginger, chopped chilli, garam masala spice, peanut butter, coconut milk and chopped tomatoes in a bowl.
3. Add the sauce to a deep pan on medium heat.
4. Cut the chicken into strips, add the strips and simmer until the chicken is cooked through for approx 10 minutes.
5. Serve the chicken with cooked rice and topped with chopped coriander.
