Chicken and Egg Salad with 1 Slice Soda Bread

2 chicken fillet

1 whole egg

1 handful lettuce

1 tomatoes

8 slices cucumber

2 slices red onion

2 tbsp sweetcorn

1 sprinkle balsamic vinegar

1 slices soda bread*

1 tsp butter*


1. You can either boil the chicken in a saucepan or for flavor sprinkle spice of your choice (cajun, paprika, chili etc.) over the raw chicken and bake in the oven until cooked through approx. 20 mins.
2. In the meantime boil the egg and allow it to cool.
3. Prepare the salad in a bowl or lunchbox.
4. Once the chicken is ready, slice into pieces along with the egg and add to the salad.
