Chicken, Egg & Nut Salad and 2 Slices of Soda Bread

2 chicken fillet

2 whole egg

1 handful lettuce

8 slices cucumber

1 tomatoes

2 slices red onion

2 tbsp sweetcorn

30 g mixed nuts

1 sprinkle balsamic vinegar

2 slices soda bread*

2 tsp butter*


1. You can either boil the chicken in a saucepan or for flavor sprinkle spice of your choice (cajun, paprika, chilli etc.) over the raw chicken and bake in the oven until cooked through approx. 20 mins.
2. In the meantime boil the eggs and allow them to cool.
3. Prepare the salad in a bowl or lunchbox.
4. Once the chicken is ready, slice the chicken into pieces along with the egg and nuts and add to the salad.
5. Serve with buttered soda bread.
