Chicken with Egg Salad and Slice of Soda Bread

2 chicken fillet

2 whole egg

1 handful lettuce

1 tomatoes

8 slices cucumber

2 tbsp sweetcorn

1 sprinkle balsamic vinegar

1 bread soda

1 tsp butter*


1. You can either boil the chicken in a saucepan or for flavor sprinkle spice of your choice (cajun, paprika, chilli etc.) over the raw chicken and bake in the oven until cooked through approx. 20 mins.
2. In the meantime boil the eggs and allow them to cool.
3. Prepare the salad in a bowl or lunchbox.
4. Once the chicken is ready, slice into pieces along with the egg and add to the salad.
5. Serve with soda bread,
