Chickpea Soup with Spinach

Ingredients

300 g spinach

100 g chickpeas

800 g water

1 tsp salt

200 g onion

30 g olive oil

250 g carrots

3 garlic cloves

100 g turnip

1 pinch black pepper

Directions

  1. With a mixing bowl, place washed and drained chickpeas and grind for 30 secs.
  2. Add 400g of water and mix for 15 secs.
  3. in a large pot sautee onions & garlic in the olive oil for a few mins
  4. Add in chickpeas mixture, diced carrots & turnip to the onion & garlic.
  5. Add remaining water
  6. Add salt & pepper.
  7. Cook for approx 30 mins.
  8. Before the end of cooking, you can either wilt the spinach in a steam pot over the mixture or place in microwave for a minute.
  9. Blitz the mixture toa smooth consistency – add spinach and combine using a spatula.
  10. Serve & enjoy
