Ingredients
5 slices cucumber
1 grated carrot
1 tomatoes
4 cubes low fat feta
1 handful rocket leaves
6 olives pitted
1 mixed bell peppers
15 g walnuts
1 tbsp balsamic vinegar
Directions
- Chop tomatoes, cucumber & peppers
- Put rocket leaves, carrot grated, cucumber, tomatoes & peppers into a bowl
- Mix in the balsamic vinegar
- Add the feta cheese
- Add olives & nuts
