The heat of the pasta will cook and thicken the egg so ensure the pasta is still hot when adding the egg mixture.
Ingredients
60 g parmesan cheese grated
30 g percorino cheese
1 shallot 30g
150 g bacon cubes
1 tbsp olive oil
350 g wholewheat spaghetti*
3 whole egg
1 egg yolks
1 pinch pink himalayan salt
1 pinch black pepper
Directions
- Grate cheese.
- Chop the shallot finely.
- Heat oil in a large wok.
- Add bacon and shallots and saute for 5 mins.
- In the meantime cook spaghetti as per package instructions.
- Once cooked mix well with bacon and shallots.
- Mix the egg, grated cheese, salt and black pepper in a bowl.
- Add egg mixture to wok with pasta and bacon. (see tip)
- Combine well.
- Serve & enjoy.
