Veggie Bolognese

Ingredients
1 red chilli
156 g grated carrot
165 g red pepper chopped
109 g onion
4 garlic cloves
0.5 pack Baby plum tomatoes
handful spinach
1 can can chopped tomatoes
1 tbsp tomato paste
1 tbsp balsamic vinegar
1 tbsp hemp oil
20 g nutritional yeast
1 kallo low salt veg stock cube
150 ml boiling water
300 g quorn mince
1 tbsp dried oregano
Directions
1.Heat oil in deep pan on medium high heat
2.Add chopped onion & chilli, 2-3mins
3.Then throw in chopped pepper, carrots & mince, 2-3mins
4.Add crushed garlic, 1min
5.Add rest of ingredients except spinach & nutritional yeast
6.Bring to boil, lower heat to simmer for 20mins until sauce thickens
7.Add spinach & nutritional yeast when sauce is cooked through
