Ingredients

225 g lamb mince

1 sweet potatoes

1 potato

0.5 tsp garlic infused oil

20 g scallions

0.5 tbsp ginger

1 tsp soy sauce*

0.5 tbsp oyster sauce

24 g fresh oregano

30 g lettuce

0.25 cucumber

1 tomatoes

0.25 carrot

Directions

1. Preheat oven to 180°C (fan 160°C/gas mark 4).
2. Peel and cube the sweet potato and potato. Place in a saucepan over high heat and boil for about ten minutes until soft. Roughly mash.
3. While the potatoes are cooking, heat the garlic-infused oil in a large frying pan, add the ground lamb mince and allow to brown. Then stir through the crushed ginger, chopped spring onion tips, soy sauce, oyster sauce and chopped coriander.
4. Place the mashed potato and lamb mixture into a large bowl, mix well.
5. Using a quarter cup measure, scoop and shape into even-sized fritters and place on a roasting tray lined with baking paper. Dust with flour and brush with a little bit of olive oil.
6. Place in the oven and bake for 10 minutes each side, until golden brown.
7. Serve the lamb fritters hot with the side salad (lettuce, diced cucumber, diced tomato and grated carrot).
