Fruity Chicken Curry with Rice

3 tsp butter*

4 chicken fillet

1 onion

4 garlic cloves

3 tbsp curry powder*

0.5 apple

1 celery stalk

0.5 red bell pepper

75 g sultanas

500 ml chicken stock cube*

pinch salt

160 g basmati rice


1. Melt butter in a heavy large frying pan over medium heat. Add diced chicken and brown on all sides for about 7 minutes. Transfer to a plate.
2. Add sliced onion and crushed garlic to the same frying pan and sauté for about 6 minutes. Stir in the curry powder. Return chicken to pan.
3. Add the diced apple, chopped celery, red pepper, sultanas and 500 ml stock and season with salt.
4. Cover and simmer for 10 minutes, or until the sauce thickens.
5. While the dish is simmering, cook the rice as per pack instructions.
