1 whole egg

2 deli style ham

handful lettuce

0.5 avocado

8 slices cucumber

1 tomatoes

2 slices red onion

30 g mixed nuts

1 tsp balsamic vinegar

2 slices soda bread*

2 tsp butter*


1. Boil the eggs and allow to cool.
3. Prepare the salad in a bowl or lunchbox.
4. Chop up the ham and add it to the salad.
5. Once the egg has cooled chop it up.
6. Add egg and nuts to the salad.
7. Serve with buttered soda bread.
