Satay Chicken Noodles

Satay Chicken Noodles

Serves 4      Prep Time: 5 mins      Cook Time: 15- 20 mins


4 x 130g chicken fillets, cut into strips
275g fine egg noodles
1 tbsp olive oil
1 red pepper, chopped
1 yellow pepper, chopped
340g broccoli
2 garlic cloves, crushed
1 x 400g tin of coconut milk
80g (4 tbsp) crunchy peanut butter
2 tbsp dark soy sauce
2 tbsp sweet chilli sauce
½ lime


  1. Cook egg noodles as per package instructions.
  2. Heat the oil in a large pan/ wok.
  3. Cook chicken until cooked through. Remove and set aside.
  4. Add in the peppers, broccoli and garlic and stir fry until vegetables are tender – 3 to 4 mins. (sprinkle with water if the mixture is to dry).
  5. Return chicken to the pan.
  6. Drain the noodles and add to wok.
  7. Add coconut milk, peanut butter, soy sauce, sweet chilli sauce and juice from the lime. Mix all ingredients together.
  8. Stir fry for another few minutes and serve.
