Beef Koftas with Salad & Sweet Potato
Dinner
Can also use Lamb or Turkey mince
Ingredients
100 g beef lean mince
1 tsp ground cinnamon
1 tsp ground cumin
0.5 red onion
1 garlic cloves
5 slices cucumber
1 tomatoes
1 handful mixed leaves
1 pinch salt
1 pinch black pepper
2 medium sweet potatoes
2 tsp olive oil
1 tsp paprika
1 pinch salt
1 pinch black pepper
Directions
1. Pre-heat the oven to 180°C (fan 160°C/gas mark 4).
2. Peel and cut potato into thin and long strips
3. In a large bowl toss them roughly in olive oil with paprika.
4. Lay the chips on a roasting dish and cook for 20 – 25 mins tossing every 5 minutes.
5 In the meantime, mix mince into a bowl with cinnamon and cumin, diced onions, finely chopped garlic and pinch of salt & pepper.
6. Mould the mince mixture into 2 equal sized sausage shapes around a skewer.
7. Place on the grill.
8. Grill on each side until cooked through (5 mins each side).
9. Chop the tomatoes & cucumber.
10. Mix the mixed leaves, cucumber, tomato and vinegar in a bowl.
11. Serve with sweet potato chips.
