Chicken Fajitas

Ingredients
2 chicken fillet
0.5 red onion
0.5 red chilli
1 tsp ground cumin
1 tsp paprika
0.5 tsp ground coriander
0.5 tsp garam masala
2 tbsp olive oil
4 wholewheat flour tortillas
Directions
1. Heat 1 tbsp. of olive oil in a pan over medium heat.
2. Add the chopped onion and red pepper, deseeded and cut into strips. Cook over low heat for 5 minutes until soft.
3. In the meantime add another tbsp. of olive oil in a bowl with spices and season with salt & pepper.
4. Add in the chicken and coat the chicken with the mixture.
5. Remove the onion and peppers from the pan and place it in a separate bowl.
6. Increase the heat on the pan and add the chicken – cook for 6- 8 mins, until cooked through and slightly golden.
7. Return onion and peppers to the pan and cook for a further 2 minutes.
8. Meanwhile, heat the tortillas in the oven covered in tin foil for 5 minutes.
9. Each person can wrap tortillas around the chicken mixture.
