Chilli Cod with Sweet Potato Chips

Ingredients
1 cod fillets
0.5 tbsp fish sauce
1 garlic cloves
0.5 lime juice
3 tsp olive oil
0.5 red chilli
0.5 red bell pepper
0.5 yellow bell pepper
1 sweet potatoes
1 tsp paprika
Directions
1. Peel and cut the potato into thin and long strips.
2. In a large bowl toss them roughly in 1 tsp olive oil with paprika.
3. Lay the chips on a roasting dish and cook for 20 – 25 mins tossing every 5 minutes.
4. To make the marinade, combine the lime juice, chilli deseeded, garlic crushed, fish sauce and 1 tsp olive oil in a bowl and mix.
5. Add the cod fillets to the bowl and coat with the marinade.
6. Place cod in a pan and cook on medium heat for approximately 2-4 minutes per side until cooked through.
7. Heat 1 tsp olive oil in another pan or wok.
8. Add the chopped peppers and stir-fry until tender.
9. Serve the cod fillets with sweet potato.
