Cod Curry

Ingredients
400 ml coconut milk
1 tbsp olive oil
1 tbsp curry powder*
3 garlic cloves
10 green beans
4 cod fillets
2 onion
4 cm ginger
1 tsp turmeric
1 pinch black pepper
1 pinch salt
260 g brown rice
Directions
1. Add the salt, pepper, and turmeric to a bowl. Add the diced fish and gently coat the fish in the spices taking care not to break up the fish.
2. Heat 2 tbsp. of oil in a pan and fry the fish until cooked through and slightly crispy taking care not to break the fish apart. Remove the fish and set aside.
3. Heat 1 tbsp. oil in the pan and fry the garlic minced, grated ginger and diced onion and until soft and browned. Add the curry powder to coat.
4. Stir in the green beans and coconut milk. Bring the curry to the boil then reduce the heat to low.
5. Add the fish, cover and simmer for 10 minutes.
6. Add salt to taste.
