Ingredients

56 g smoked salmon

1 whole egg

handful mixed leaves

8 cherry tomatoes

5 slices cucumber

0.5 bell pepper

0.5 onion

1 slices soda bread*

1 tsp butter*

Directions

1. Boil an egg in a saucepan for approx 6 – 7 mins.
2. Mix all ingredients in salad bowl with spices if required.
3. Serve salmon and salad on top of brown bread.
