Pork Chops with Stewed Tomatoes, Capers & Rosemary served with Sweet Potato Chips

Ingredients
1 pork tenderloin
0.5 tbsp olive oil
0.5 garlic cloves
0.5 tbsp sweet pickle relish
100 g can chopped tomatoes
0.5 tbsp capers
1 tsp dried rosemary
pinch salt
pinch black pepper
2 sweet potatoes
1 tbsp olive oil
1 tsp paprika
Directions
1. Season pork with 0.5 tsp salt and pepper
2. Heat 1 tbsp. oil in a pan over medium-high heat, then add chops, turning once, about 5 minutes total. Transfer to a plate and cover with foil.
3. Add remaining tbsp. oil and minced garlic to the pan over medium-high heat for 30 seconds. Add chopped tomatoes and remaining ingredients and simmer, stirring once or twice, approx. 3 minutes.
4. Add pork to the mixture, turning to coat, and simmer, uncovered, for about 2 to 3 minutes – until cooked through.
5. Season with salt and pepper.
