Beef Chilli with Rice

Instructions:

100g basmati rice, uncooked
1 tbsp. olive oil
1 red bell pepper, chopped
1 onion, sliced
1 cloves garlic, minced
½ tbsp. chili powder
½ tbsp. ground cumin
Pinch of salt
1 lb. lean minced beef
1 x 400g can diced tomatoes
2 tbsp. grated cheddar cheese

Directions:

  1. Cook rice as per package instruction.
  2. Heat the oil in a wok. Add red pepper and onions and cook until tender, approx 5 minutes.
  3. Add garlic and cook for a further minute. Add chili powder and cumin and stir until combined, then season with salt.
  4. Add beef and cook until cooked through.
  5. Add tin of tomatoes and stir until combined.
  6. Serve with rice and garnish with green onions and grated cheese.
