Healthy Breakfast Muffins

These healthy breakfast muffins are a great way to start the day  These ham and mushrooms muffins are only 223 calories and are a great way to start the day.  If you make a bigger batch you could bring in for a snack or lunch with a side salad.

Ingredients

8 button mushrooms, peeled and sliced
1 spring onions
2 slices of lean ham
2 eggs
Low-calorie cooking spray

Directions

1. Preheat oven to 200°C (fan 180°C/gas mark 6).
2. Fry sliced mushrooms in a frying pan with the low-calorie cooking spray.
3. Add the spring onions and ham.
4. Tip the mixture into a muffin tray
5. Whisk the 2 eggs and pour over the mushroom, onion and ham mixture.
6. Cook for 20 – 25 mins.
