Ingredients
200 g water
1 tsp olive oil
1 pinch salt
40 g penne pasta*
35 g chickpeas
5 cherry tomatoes
6 g mozzarella cheese grated
1 handful spinach
0.5 red chilli
1 tsp olive oil
1 tsp parsley
1 tbsp lemon juice
1 pinch salt
1 pinch black pepper
Directions
To Prepare Salad
- Cook pasta as per package instructions
- Cook chickpeas as per package instructions
- Stir in 1 tsp of olive oil to cooked pasta
- Add the chickpeas, cherry tomatoes chopped, spinach and mozzarella to pasta and toss to combine.
To Prepare Dressing
- Finely dice chilli with or without seeds.
- Add 1 tsp oil, lemon juice, parsley, salt & pepper.
- Pour over the pasta mix
