Ingredients

300 g quorn mince

1 onion

2 green chilli

4 garlic cloves

1 can kidney beans

1 can black beans

1 can chopped tomatoes

150 g mushrooms

100 g grated carrot

1 cup spinach

1 red pepper chopped

300 g basmati rice

1 tbsp olive oil

1 tbsp tomato paste

1 kallo low salt veg stock cube

1 tbsp cacao powder

1 tbsp smoked paprika

1 tbsp cumin

1 tsp chipotle powder

pinch salt

Directions

1.Heat olive oil in deep pan on medium high
2.Add chopped onion & chopped chilli (deseeded) 2-3 mins
3.Add mince, 2 mins
4.Add crushed garlic, 1 min
5.Add spices, 2 mins
6.Add tomatoes, veg stock cube (crumble through fingers), beans, cacao & tomato paste
7.Bring to the boil & then lower the heat and simmer for 20 mins
