Wholemeal Raisin Pancakes

Try our delicious and tasty wholemeal raisin pancakes. Raisins are optional. Can serve this will some yoghurt and fruit. Great for a breakfast that will keep you full and satisfied for your morning ahead.

Ingredients

• 125 g raisins (if using)
• 110 g wholemeal plain flour
• 1 tbsp soft brown sugar
• 1.5 tsp ground cinnamon
• 1 tsp baking powder
• 0.5 tsp bicarbonate soda
• 2 whole egg
• 250 semi-skimmed milk*

Directions

1. Place the raisins (if using) in a bowl, cover with 250ml boiling water and set aside for 1-2 hours. Drain well.
2. Sift the flour into a large bowl. Add the sugar, cinnamon, baking powder and bicarbonate of soda and make a well in the centre. Mix together the eggs and milk in a jug and pour into the well, stirring to form a smooth batter. Stir in the raisins.
3. Heat a frying pan with a little olive oil and pour 125ml onto the pan. Cook until golden brown on both sides.
