Chicken Pesto Pasta & Veg

This is so tasty and so simple to make. Great for a weeknight dish.  Can have any leftovers for lunch the next day just eat cold or reheat.

Ingredients

 1 chicken fillet

 63 g wholemeal pasta*

 180 g broccoli florets

 0.5 bell pepper

 80 g courgette

 2 tbsp basil pesto

Directions

1. Preheat the oven to 180°C (fan 160°C/gas mark 4).
2. In a bowl, combine the diced chicken, chopped vegetables, and pesto until the chicken and veggies are coated well with pesto.
3. Transfer mixture to a large baking tray and bake for 15-20 minutes.
4. In the meantime cook pasta as per pack instructions and serve with the dish.
