Chicken Satay Curry

Chicken Satay Curry

Preparing time: 5 mins
Cooking time: 15 mins
 Serves: 2 

Ingredients:

3 x chicken breast, sliced into strips
200 g chopped tomatoes
100 mls coconut milk (Alpro)
1 small bunch of coriander
1 tsp garam masala
1 tbsp. peanut butter
1 x red chili chopped
2cm of fresh ginger, grated
120g basmati rice, uncooked

Directions:

1. Cook rice as per package instructions.
2. To make the peanut butter sauce combine the ginger, chili, masala spice, peanut butter, coconut milk and chopped tomatoes in a bowl.
3. Add the sauce to a deep pan on medium heat
4. Add the chicken strips and simmer until the chicken is cooked through for approx 10 minutes.
5. Serve the chicken with cooked rice and topped with chopped coriander.
