Cajun Chicken, Side Salad with Brown Bread

Ingredients
2 chicken fillet
1 tbsp olive oil
0.5 tsp paprika
0.5 tsp salt
0.5 tsp cayenne pepper
0.5 tsp ground cumin
0.5 tsp thyme dried
1 pinch black pepper
0.5 tsp garlic powder
1 handful mixed leaves
8 cherry tomatoes
5 slices cucumber
0.5 bell pepper
0.5 red onion
2 slices soda bread*
2 tsp butter*
Directions
1. Preheat oven to 180 C / Gas mark 4. Mix together all of the spices. Rub one side of chicken breasts with spice mixture.
2. Heat oil in a cast-iron pan over high heat.
3. Place chicken in a hot pan, seasoned side down, and cook for 1 minute. Turn, and cook 1 minute on other side.
4. Place breasts on a lightly greased baking tray. Bake in preheated oven for 5 to 10 minutes, or until cooked thoroughly.
5. Serve with a side salad (Mixed salad leaves, tomatoes, cucumber, pepper, and onion)
6. Enjoy with soda bread.
