Chicken Kebab, Salad & Sweet Potato Chips

Perfect for a summer BBQ
Ingredients
1 chicken fillet
1 mango
1 red bell pepper
1 yellow bell pepper
1 red onion
8 cherry tomatoes
0.5 avocado
1 handful mixed leaves
1 tbsp coconut oil
1 tbsp chilli flakes
0.5 lemon juice
1 tbsp olive oil
2 medium sweet potatoes
Directions
Sweet Potato:
1. Pre-heat the oven to 180°C (fan 160°C/gas mark 4).
2. Peel and cut potato into thin and long strips.
3. In a large bowl toss them roughly in olive oil with paprika.
4. Lay the chips on a roasting dish and cook for 20 – 25 mins tossing every 5 minutes.
Chicken Kebab
1. Cut chicken, onions, peppers and mango into chunks.
2. Skewer the chicken, onion, peppers, mango and tomatoes onto sticks.
3. Melt coconut oil and brush all over then sprinkle the chilli flakes on – grill or oven bake until chicken is cooked through.
4. In the meantime peel and chop the sweet potatoes into chips, lay the chips on a roasting dish with some olive oil and cook for 20 – 25 mins tossing every 5 minutes.
5. In the meantime prepare the salad by finely chopping your cucumber, onions, peppers, tomatoes and avocado.
6. Mix all ingredients in salad bowl with mixed leaves add spices if required.
7. To serve squeeze lemon juice over the bowl of salad.
8. Serve with sweet potato chips.
