Ingredients
300 g spinach
100 g chickpeas
800 g water
1 tsp salt
200 g onion
30 g olive oil
250 g carrots
3 garlic cloves
100 g turnip
1 pinch black pepper
Directions
- With a mixing bowl, place washed and drained chickpeas and grind for 30 secs.
- Add 400g of water and mix for 15 secs.
- in a large pot sautee onions & garlic in the olive oil for a few mins
- Add in chickpeas mixture, diced carrots & turnip to the onion & garlic.
- Add remaining water
- Add salt & pepper.
- Cook for approx 30 mins.
- Before the end of cooking, you can either wilt the spinach in a steam pot over the mixture or place in microwave for a minute.
- Blitz the mixture toa smooth consistency – add spinach and combine using a spatula.
- Serve & enjoy
