Chilli Roasted Chicken Thighs with Baby Potatoes & Side Salad

Ingredients
2 chicken boneless thighs
1 tbsp olive oil
1 tbsp chilli powder
1 pinch salt
1 pinch black pepper
1 pinch fresh coriander
4 baby potatoes
1 handful mixed leaves
8 cherry tomatoes
5 slices cucumber
0.5 bell pepper
0.5 red onion
Directions
1. Boil potatoes in a pot for approx 20 mins until cooked.
2. Pre-heat the oven to 190°C (fan 170°C/gas mark 5).
3. Place chicken on a sheet pan. Drizzle with olive oil and turn to coat. Rub with chili powder, salt, and pepper.
4. Roast chicken thighs until cooked through, about 15 minutes.
5. Sprinkle with coriander
6. Serve with baby potatoes and side salad (Mixed salad leaves, chopped tomatoes, cucumber, peppers and onion).
